RECOMMENDATIONS FOR CHEESE TASTINGTHE CHEESE "CLOCK"
Tasting cheeses arranged in a clock formation can be a fun and interesting start to a meal. The cheeses produced by Caseificio Rosso can all be numbered among the traditional Biellese cheeses. Although they are all soft- textured they vary according to the milk, which is collected in different valleys, the different grasses and breeds of cow. The various cheeses will be at different stages of maturation and consequently the flavours will vary.
Preparation of the dish:
using a flat platter place slices of cheese of about 30 gr. each in a clockwise direction according to the intensity of the flavour. Begin with the mild cheeses and finish with the stronger tasting ones. To mark the start and end points of the tasting, place teaspoonfuls of honey and jams to eat with the cheeses..
