CASTELROSSO RICE AND PEARS:Ingredients (for 4 people):
300g of arborio rice , 400g of "CASTELROSSO" cheese from Caseificio Pier Luigi Rosso, 1.5l of vegetable broth, 50g of "LIRIN", butter, a glass of white wine, 2 firm pears, 1 organic lemon, thyme.
Cook the butter and rice in a saucepan. Turn up the heat and add the wine, leaving it to evaporate. Turn down the heat and gradually add the boiling broth, stirring from time to time until the rice is almost cooked. Stir the cheese and the pears cut in pieces into the rice and cook them for a few minutes over a low heat. Serve in hot dishes, adding a little grated lemon peel and a dusting of thyme.
